I would like to know if a documentation to write JoomSEF Extensions is available.

We develop a private component and we want to make working with JoomSEF...

Hello,

I'm sorry, there's no written documentation on how to develop extensions for JoomSEF. I'd suggest you to investigate existing extensions for standard Joomla components that are shipped with JoomSEF. All the main work happens in the create() function.
