If we buy the JoomSEF Sitemap-Generator, will it also include the Virtuemart-Porducts?

unfortunately I don´t understand what you mean by "JoomSEF Sitemap-Generator" and "Virtuemart Products"? Do you mean paid JoomSEF and Virtuemart JoomSEF extension? If yes then JoomSEF and Virtuemart JoomSEF extension are two separated extension.
