TOPIC: SOBI2 and Meta Data Problem

I am using JoomSEF 3.8.1 and SOBI2 Extension 2.0.10
I have left all the Extension settings at Default.
My Meta Data Title and Description are incorrect (see below)
1. The title has a leading "- " , can this be removed?
2. The description is set to ". By Water." This has used the SOBI2 Category but has preceded it with ". " and put a "." after?
a. Can I remove these extra characters
b. Can I set the description to another field from my SOBI2 entry?
