please, can you send us the screenshot of max_input_vars from your Joomla System info?
Joomla 1.5 --> Help --> System info --> PHP Informations
Joomla 2.5 --> Site --> System info --> PHP Informations

Hello,

According to your phpinfo, your server is running through Suhosin module, so you also need to update the relevant values in the Suhosin configuration.
We don't have experiences running VM Invoice with Suhosin, but I suppose you should increase the following values:
suhosin.post.max_vars
suhosin.request.max_vars
